I see where you're coming from, but I think that way lies a lot more specificity than is useful. Yes, STR is a very general trait, and I suppose if we wanted to we could introduce different kinds of STR, perhaps for different parts of the body. One character might have very strong arms, while another has strong legs and back for carrying things.
There comes a point in any game system when additional detail becomes more trouble than it's worth.
I was working on some fatigue rules myself that ran into this problem. I am currently trying to pare them down into something workable, which will also provide a coherent system to integrate food and natural healing as well.
